Some EGG-citing Notes

Who wants some eggs? Egg is almost a staple food for everyone, just as how we eat rice daily. It is because, its one of those food that is easy to prepare, very accessible - you can buy it even at a nearby sari-sari store; it is still affordable at P4 - P5 per piece.

Eggs are poultry products, we usually refer to as chicken eggs. Although there are also other kinds of eggs that we used in cooking, like the duck and the quail eggs.

How can you tell if an eggs is fresh?
1. Give it the look. Fresh eggs have dull and rough shells, while older eggs have smooth and shiny shells.
2. Take it for a swim. Put the egg in a bowl of cold water.  If it sinks, then it is fresh but if it floats then it is not as fresh.
3. Give it a break. Break the eggs in a saucer.  a fresh egg will have a thick viscous egg white with a well-rounded, plump yolk.  An older egg has a watery egg white that spreads and a flat yolk that easily breaks.

How do you store leftover eggs?
1. Leftover egg whites can be kpet in a closed container in the refrigerator for a few days and in the freezer for a longer time.
To keep leftover egg yolks in the refrigerator, place them in a covered container topped with some water to prevent drying out. To keep in the freezer, first add either 1/8 teaspoon salt or 1 1/2 teaspoons sugar to evey 1/4 cup of yolks.  This will prevent the yolks from gelling. To freeze whole eggs, beat them first before placing in containers.
